Fettuccine Alfredo

Homemade Alfredo is so simple to make, you'll never reach for that store bought jar again!

Here's what you'll need:

  • Fettuccine 
  • Heavy Cream
  • Parmesan Cheese (Grated)
  • Butter
  • Flour
  • Salt and Pepper
  • Chicken or Shrimp (Optional)

The Process

Start by bringing a large pot of water to a boil. Add some salt to the water (Optional). Cook one 16 ounce package of Fettuccine noodles for 11-13 minutes or until they are cooked to your desired doneness.

While the noodles are boiling, prepare the sauce. In a large saucepan, melt 2 tablespoons of butter on medium-low heat. Whisk in 2 tablespoons of flour and cook for 1-2 minutes to create a roux. (This sauce can be made without the roux, but I think it makes it easier to create a cohesive Alfredo sauce. If made incorrectly, the sauce can easily separate. Alfredo does not reheat well because it separates, so, I do not recommend reheating leftovers.) You don't want the heat too high when you make the roux because the butter can brown and the flour will burn once added.

Next, whisk in 1 quart of heavy cream until smooth. Increase the heat to medium/medium-high and let it come to a bubble. Once it has thickened slightly, reduce the heat to medium-low and whisk in 1 cup of grated Parmesan cheese. You can grate your own, but most grocery stores offer good quality pre-grated Parmesan in the refrigerated cheese section. Taste the sauce and add salt and pepper as needed. 

Remove the sauce from the heat and set aside while you cook your chicken. Place a chicken breast on a cutting board and lay a piece of plastic wrap over the top. Using a rolling pin or meat mallet, pound out the chicken breast so that it is an even thickness throughout. Season with Southern Bell BBQ Seasoning. Heat a skillet on medium-high heat. Drizzle the pan with oil, Sear the chicken on both sides, about 2-3 minutes per side. Reduce the heat to low and cover with a lid. Let the chicken cook until lit reaches an internal temperature of 165°F.

Drain the Fettuccine noodles and toss them into the sauce. Slice the chicken breast and serve over the Fettuccine Alfredo and enjoy!

Grated Parmesan cheese

Chicken Breast (optional) Seasoned with Southern Bell BBQ Seasoning

  1. Bring a large pot of water to a boil. Sprinkle some salt into the water. Add the fettuccine and cook for 11-13 minutes or until your preferred doneness.
  2. Heat a large saucepan on medium-low heat. Add 2 tbsp of butter. Once melted, whisk in 2 tbsp flour and cook for 1-2 minutes. Whisk in 1 quart heavy cream. Increase the heat to medium, stirring occasionally. Once it comes to a bubble and thickens slightly, reduce the heat back to medium-low. Stir in 1 cup grated Parmesan cheese. Whisk until smooth. Taste the sauce season with salt and pepper as needed.
  3. For the chicken, lay the breast on a cutting board and cover with a layer of plastic wrap. Pound out the chicken breast until it is an even thickness throughout. Season both sides with Southern Bell BBQ Seasoning. In a skillet on medium-high heat, sear the chicken on both sides for 2-3 minutes. Reduce the heat to low and cover with a lid. Let the chicken cook, flipping occasionally, until it reaches an internal temperature of 165°F.
  4. Toss the noodles and sauce together. Slice the chicken breast and serve over the top of the pasta.
