Here's what you'll need:
The Process
Start by prepping 10 ounces of pecan halves. Leave 1/3 of the pecan halves whole. Chop the other 2/3 into small pieces. This gives you a combination of big and small pieces. If you prefer, you can chop all of the pecans.
In a bowl, whisk together 3 eggs. Stir in 1/2 cup sugar, 1/4 cup brown sugar, 3 tablespoons of melted butter, 1 cup of light corn syrup, 1/4 teaspoon salt, and 1 tsp vanilla. Mix until smooth.
Next, fold in the pecans. Pour the mixture into an 8" or 9" unbaked pie crust. Bake the pie an an oven pre-heated to 350°F for 1 hour and 15 minutes or until the pie reaches an internal temperature of 200°F. Let the pie sit for 2.5-3 hours to set completely.

Pour the filling into an unbaked pie crust. 5. Bake at 350°F for 1 hour and 15 minutes or until the pie reaches an internal temperature of 200°F. 6. Let the pie cool on the counter for 2.5-3 hours to fully set. |
