Baked Potato Soup

Baked potato soup has all the things you love about a baked potato in one big pot!



Here’s what you’ll need:

Toppings:

  • Bacon
  • Cheddar cheese
  • Sour Cream
  • Green onions

The Process

Start by dicing 8 slices of bacon. Mince 2-3 cloves of garlic. Then, dice half of a white onion. Next, wash and peel the potatoes. Dice and measure 8 cups of potatoes.

Tip: open any cans of chicken broth before you start!

In a pot on medium heat, cook the bacon. Once completely browned, remove the bacon from the pot and set aside. Next, add the garlic and onions to the pot. Cook for 3-4 minutes until they start to soften. Add the potatoes, 3 cans of chicken broth, and 1 tablespoon of Southern Bell BBQ Seasoning.

Place the lid on top, increase the heat to medium-high, and bring to a boil. Let the potatoes cook for 8-10 minutes. Once the potatoes are tender, add 1 cup of heavy cream. Remove the pot from the heat. Using a blender, blend the soup until smooth. 



Top your soup with the cooked bacon, cheddar cheese, green onions, or a cool dollop of sour cream and enjoy!

8 cups

Russet potatoes, peeled and diced

8 strips

Bacon

2-3 cloves

Garlic

1 cup

White onion, diced

(3)-14.5 oz cans

Chicken Broth

1 tablespoon

Southern Bell BBQ Seasoning

1 cup

Heavy Cream

For Toppings

Bacon

Cheddar cheese, shredded

Green onions

Sour cream

1.     Mince 2-3 cloves of garlic. Dice 1 cup of white onions. Dice 8 strips of bacon.

2.     Rinse and peel potatoes. Dice and measure 8 cups of potatoes.

3.     In a pot on medium heat, brown bacon until crisp. Remove bacon and set aside.

4.     Add the garlic and onions to the pot. Cook for 3-4 minutes until they start to soften.

5.     Add the potatoes, 3 cans of chicken broth, and 1 tablespoon Southern Bell BBQ Seasoning. Stir and cover with a lid. Increase heat to medium-high. Bring to a boil and cook for 8-10 minutes or until the potatoes are tender.

6.     Add the heavy cream. Remove from the heat. Blend the soup with a handheld or regular blender.

7.     Top with the cooked bacon, cheddar cheese, green onions, and sour cream.
