Cilantro Lime Slaw

Cilantro lime slaw is creamy, crunchy, and perfect for fish tacos!

Here's what you'll need:

  • Cabbage
  • Purple Cabbage
  • Shredded Carrots
  • Mayonnaise 
  • Cilantro
  • Limes
  • Salt
  • Pepper
  • Garlic Powder
  • Sugar 

The Process

Start by finely slicing 1/2 a head of cabbage and 1/4 head of purple cabbage. Add to a large bowl with 1 cup of shredded carrots.

For the dressing, mix 1/2 cup mayo, 1 tablespoon finely chopped cilantro, juice of 2 small limes (or 1 large lime), 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/4 teaspoon garlic powder, and 2 teaspoons sugar. Mix until smooth.

Add the dressing to the cabbage. If you like A LOT of dressing, feel free to double the dressing recipe. Refrigerate until ready to serve.

1.     Finely slice ½ a head of cabbage and ¼ head of purple cabbage. Add to a bowl with 1 cup of shredded carrots.

2.     Finely chop 1 tablespoon cilantro. In a bowl, mix together mayo, cilantro, juice of 2 small limes, salt, pepper, garlic powder, and sugar.

3.     Pour the dressing over the slaw and toss to coat.

4.     Refrigerate until ready to serve.
