Homemade french fries are sure to impress you and your family!
Here's what you'll need:
The Process
Start by washing and peeling the potatoes. I like to cut the ends off the potatoes for uniform sized fries. Next, cut the potatoes into fries. you can do this simply with a knife and cut any size fries you like. I prefer to use a slicer for more even and uniform fries. *When using a slicer, always use the guard as potatoes can be very slick to work with when peeled.
Place the fries in a large bowl and fill with cold water. Soak for 30 minutes. Then, drain the water and rinse repeatedly or continuously run cold water in the bowl until the water in the bowl runs clear. Agitate the fries with your hands to help get any starch loose.
Once the fries are completely rinsed, place them on a baking sheet lined with paper towels and pat them dry. I like to wait about 15 minutes after patting them down to let them air dry more.
In a small bowl, mix together 1 tablespoon Southern Bell and 1 tablespoon Southern Hospitality. For more heat, use Southern HOTspitality instead.
Heat frying oil (we used peanut) to 300°F. Cook the fries for 4 minutes. They should not be changing color. The main goal is to start cooking the inside of the fries. Remove from the oil, drain, and place them on a baking sheet lined with a wire rack or paper towels to drain excess oil. Continue with any remaining batches.
*We have a single basket fryer. I used 6 large potatoes and cooked these fries in four batches.
Once all the fries have been blanched in the oil, increase the heat to 375°F. Cook the fries in batches for 6-10 minutes until golden brown and crisp. *For more tender fries, cook to 6 minutes. For crispier fries, cook closer to the 8-10 minute range. When the fries are done, remove and drain from the oil. Immediately season the fries with the seasoning mixture. Serve and enjoy.

Heat oil to 300°F. Cook the fries in batches for 4 minutes. Remove from oil and drain. Place on a baking sheet lined with a baking rack or paper towels to remove excess oil. Repeat for the remaining batches. 4. Increase the heat to 375°F. Cook the fries for a second time for 6-10 minutes. For crisp but tender fries, cook for 6-7 minutes. For crispier fries, cook 8-10 minutes. 5. Mix 1 tablespoon Southern Bell and 1 tablespoon Southern Hospitality together. 6. Remove the fries from the oil and drain. Immediately season. Serve and enjoy. |
