Mango salsa is a fresh and delicious topping for any taco this summer!
Here's what you'll need:
The Process
Start by peeling 2 large mangoes. Cut the flesh from the pit and dice into small cubes. Dice 2 Roma tomatoes. Finely dice 1/3 cup red onion and 1/3 cup white onion. Then, remove the seeds from 1 whole jalapeño and finely dice. If you want more spice, keep the seeds. Finely chop a handful of cilantro. Throw all the ingredients in a bowl and mix. Add the juice of 1-2 limes depending on the size of the limes. Sprinkle 1/2 tsp of salt and stir everything together. Adjust salt to taste as needed. Refrigerate until ready to serve!
